INGREDIENTS

48        frozen mini phyllo cups

Buffalo Chicken:

1          can (10 ounces) chunk chicken, drained
1 package (8 ounces) cream cheese, thawed
1/3       cup buffalo sauce
1/4       cup ranch dressing
1/2       teaspoon garlic powder
3          tablespoons blue cheese crumbles, optional
1          tablespoon minced fresh chives

Apple Pie:

1 can (21 ounces) apple pie filling
1/3      cup firmly-packed light brown sugar
1/3      cup all-purpose flour
1/3     cup pecan chips
Pinch salt
3          tablespoons butter, softened

DIRECTIONS

Preheat oven to 350F. Line Mega Mini Muffin pan with phyllo cups.

In large bowl, combine chicken, cream cheese, buffalo sauce, ranch dressing, and garlic powder. Mix until well combined and all large chunks of chicken are broken up. Divide mixture evenly into half of the pan. Sprinkle with blue cheese if desired.

For pies, stir together brown sugar, flour, pecans and salt in medium bowl. Cut in butter until mixture resembles coarse crumbs.

Strain apple pie filling until most of the jelly is removed and discard. Move apple mixture to a medium bowl and cut up large chunks of apple with kitchen scissors. Divide mixture evenly into half of the pan. Top with brown sugar mixture.

Bake 14-16 minutes, or until cheese has melted and streusel is golden brown.

Cool in pan on cooling grid 5 minutes. Top buffalo chicken bites with chives. Serve warm.

Makes 2 dozen of each.
