You guys, I fell down a rabbit hole, and that hole was lined with delicious flavored gelatin. It started out innocently enough. I was looking for my mami’s delicious no bake recipe for a cheesecake-like JELLO called “Gelatina Flotatina.” When I was little, she would do some magic with a can of evaporated milk that resulted in a light cheesecake-mousse-y thing that wasn’t too sweet and also refreshing.
It’s delicious, easy to make, cheap, AND doesn’t require turning on the oven in this summer heat. It’s made with a combination of flavored or unflavored gelatin, evaporated milk, sweetened condensed milk and/or cream cheese. I LOVE ALL THOSE THINGS.

We wanted to give you a behind-the-scenes look at how we come up with new and exciting product ideas, like the Color Swirl 3-Color Coupler. All of our projects start with goals—what do we want to accomplish for our Wilton decorators? From the onset of this concept—creating one tool to pipe multiple icing colors at the same time—we had three distinct goals in mind:
1. HELP decorators use a bunch of colors at the same time
2. Make the piping bag be EASY to refill
3. Ensure it’s fast and SIMPLE to use (nothing fancy except the results!)
Next, we started “Cakestorming” different solutions that could meet all three of goals. We gathered a TON of ideas that we tested with quick mock-ups . Slowly, we filtered through the our “cakestorm” Post-its covering the wall and narrowed it down to just the ideas that best supported our three goals.
We ended the Post-it session with the idea that we had to use a different bag for each color. This makes refilling so easy! It’d be just like filling any ‘ole bag! We also knew we wanted a single coupler that could hold a single tip to keep it simple to use. But then the question became, how do we connect multiple bags to a single coupler? As you can see, we went right back to our Post-its:
First, we tried to feed different bags through a center wheel shape (#1), but the bags weren’t secure enough and popped out with too much pressure. That led us to a 1/3 coupler piece that could be placed in each bag (#2). This could secure the bags just like our normal couplers, keeping it super simple! Then, we went to engineering to help us get the threading just right (#3), and to figure out a way to register the pieces together so it’s easy to assemble.
What came out is a product we believe HELPS decorators create multi-colored masterpieces that is EASY to fill, SIMPLE to use and creates impressive multi-color icing swirls! As Father’s Day comes near, I can’t help be reminded of the man who inspired me in so many ways, including getting into decorating cakes.
Before he came to America, dad worked in a pastry shop in Athens Greece. He didn’t move to the United States until 1959, when he took his first job working at the University Club’s bakery in down town Chicago .
