March 6th, 2015 by Desiree Smith

Mint-flavored treats for St. Patrick’s Day are as popular as pumpkin spiced everything in the fall. Sweet Treat Team Blogger Cat Davis at Food, Family and Finds brings us a simple, yet beautifully decorated treat for St. Patrick’s Day with these chocolate mint cookie ball pops.

That’s right, these aren’t cake pops – they’re cookie pops! The fudge-like texture inside is just mouthwatering, and the drizzle of green Wilton sparkle gel adds the perfect touch of green. The recipe and decorating instructions can be found here.

If cupcakes are more your style, check out Cat’s rainbow cupcakes topped with marshmallow buttercream. The icing looks like a fluffy cloud resting atop these cupcakes!

I thought St Patrick was a day to drink bier and listen to music, but I’m of French origin and probably doesn’t know st Patrick’s celebrations well… Next year I won’t forget to celebrate him with some homemade delicacies:) (I don’t drink any alcohol anyway!)
