Dietetic Internships: One Intern’s Wilton Experience

Whether you are into food science, food marketing, baking or decorating, Wilton sure is something to see!  For me, it was my science background, passion for food, and love for getting creative in the kitchen that drew me to Wilton.

The majority of my internship was spent in the Test Kitchen with the Culinary Specialists and Food Scientist where I performed product testing and quality control. I tested items like fondues, candy melts, icing color, baking cups, and baking pans checking the consistency, color, odor, staining and more. Competitive product testing involved seasonal baking and decorating kits that I prepared according to the package directions and evaluated based on ease of use, flavor, texture, appearance, and yield. Testing competitive products allows for Wilton to compare how they measure up and ultimately achieve product superiority. I also touched up on my baking skills while I was working in the kitchen- an added perk!

When I wasn’t spending time in the test kitchen, I was meeting with other departments including the Food and Product Regulatory Team, Creative Services, Decorating, Photography, and Marketing. I loved learning about how much Wilton
has grown –especially with education, which sets them apart from their competitors in a big way. I was even able to jump into a Master class at the Wilton School where people come from all over the world to attend. During my abbreviated Masters course, I learned how to make decorative drop flowers from royal icing. Wilton knows how to make learning experiences fun and geared toward everyone. I’m looking forward to attend a class of my own in the future.

Wilton is a leading cake decorating company and I’m an aspiring dietitian, it may seem contradictory. However, this internship was a unique and nontraditional opportunity for me worth exploring. Dietitians nowadays can wear many hats within a food company, working across departments, such as regulations, research, product development, communications, marketing, and sales. Those working at Wilton do indeed come from many different degrees and backgrounds, which makes for a more creative and sound team of professionals. I learned more about the business side of the food industry and met some truly inspirational people along the way.

She received her Bachelors in Human Nutrition Foods and Exercise with concentrations in Consumer Foods and Dietetics at the University of Virginia Tech in Blacksburg, VA.
