Learn The Wilton Method® Online – Anytime, Anywhere!

It’s an exciting time at Wilton! We are happy to announce that, for the first time ever, The Wilton Method® baking and decorating classes are offered online!

For over 85 years, Wilton has been the leader in cake decorating education and the Wilton Method® is the best and easiest way to learn cake decorating. Now, we’ve partnered with Craftsy to offer our first internet-based classes, ensuring that no matter where you are or when you are available, you are able to learn the Wilton Method of baking and cake decorating from your computer, tablet, or smartphone. I’m extremely proud to be the first Wilton instructor to host classes on the Craftsy platform and to show that anyone, of any skill level, can easily achieve baking and cake decorating success through the Wilton Method®.

The Craftsy platform is a phenomenal tool, letting you interact with your instructor and other people enrolled in the class. You can ask questions and get personalized answers, as well as post photos of your projects. You can even bookmark specific parts of classes, and watch them over and over. Your access never expires.

There are four Wilton Method® classes provided via Craftsy:

  • Baking BasicsBaking Basics – Learn the secrets to baking the perfect layer cake. I’ll talk you through your bakeware options and how to prepare your pans, show you how to properly measure wet and dry ingredients, mix perfect cake batter, and cool the cakes properly to ensure that they have a beautiful, even surface, perfect for icing and decorating. I’ll share a luscious chocolate filling recipe and show you how to torte the cake layers and put it all together. Finally, I’ll show you a couple of different ways to ice and decorate your cake with buttercream, so that it looks as great as it tastes.
  • Buttercream SkillsButtercream Skills – If you want to pipe perfect buttercream decorations, then this is the class for you! I break down over 30 classic piping techniques, including the shell border, the colonial scroll, printing and writing, and drop strings. Each technique has its own combination of bag position, icing consistency and pressure control and I’ll guide you through them, giving you all of the information you need to be successful. There are 3 cake projects scattered throughout the class to show you easy ways to feature your new skills, as well as written instructions for a variety of other projects with piped buttercream decorations.
  • Yellow Tinted Fondant and ToolsPiped Flowers – Flowers are some of the most-often used cake and sweet treat decorations, perfect for many occasions. In this class, I’ll demonstrate more than 15 flowers, both on and off of the flower nail. All of these flowers can be piped in either royal icing or buttercream icing. I’ll also show you coloring techniques like bag striping, brush striping, and painting to give your petals a beautiful, natural variegation. I’ll talk about color theory and cake design principles while guiding you through 3 complete projects using the flowers you’ve learned. In addition, there are written instructions for several other projects to inspire you.
  • Decorating With FondantDecorating with Fondant – Fondant is one of my favorite decorating mediums because it is so versatile! You can color it, mold it, cover cakes with it, make accents and embellishments with it…the list is endless! In this class, I’ll demonstrate how to cover round, heart-shaped and square cakes for a smooth, seamless finish. I’ll show you how to make a double loop bow, a ribbon rose, molded fondant pieces, and how to add color and luster to fondant. I’ll walk you through 4 complete cake projects, and leave you with ideas and inspiration for several others.

Beth Somers Beth Somers is the Senior Test Kitchen Manager and has taught at the internationally acclaimed Wilton School of Cake Decorating and Confectionery Art in Darien, IL. As a competitor on the Food Network's Cupcake Wars, she shined as a champion during season 6. Before joining Wilton, Beth honed her pastry skills at Le Cordon Bleu College of Culinary Arts in Chicago. Beth loves showing people how fun and easy it can be to bake and decorate amazing sweet treats with Wilton products.

    i love cake decorating!! i get all my stuff michaels and hobby lobby and wilton.
    I lost my brother 4.5 years ago i gave up cake decorating, i want to get back into it. i used to teach the wilton method. i want relearn what i lost can you help me?

    I’m currently taking Course 2 at a Michael’s store, and find having the video class is a great supplement. I can hit rewind over and over to study a technique without feeling like I’m trying the teacher’s patience! And the video class covers things that I’m not getting in the store class. You’re a great teacher, Beth!

    I am taking course 1 at michaels store in lasalle, quebec with my eldest daughter. We have both purchased all the necessary and optional Wilton products for all the 4 courses and pre-registered for the courses as well. Unfortunately we were told today that future classes will be held on sundays instead of saturdays as they wish to hold childrens birthday events in the classroom. We both work retail and cannot attend future classes on the changed days. They refunded the course cost for 2,3 and 4 but but can not accept the retail products we had purchased for all 4 courses (in duplicate) as they have been opened. This has cost us dearly and i think highly unprofessional to do this to clients after re-assuring us on initial registration that all future course levels followed consecutively. If we were to take the courses online through craftsy do the online courses qualify us to become instructors? I am very disappointed with Michael’s Crafts at this point in time.

    Would like to know if your icing colors are gluten free, read this on a g-free site but they also mentioned their product right after comment about your food coloring not being safe for those with Celiac disease or Gluten Intolerance. I have every color…and Celiac and have never had a problem. However opening a g-free retail outlet with a bakery. I would prefer to use your products but must make sure they are safe for my customers.
