You guys, I fell down a rabbit hole, and that hole was lined with delicious flavored gelatin. It started out innocently enough. I was looking for my mami’s delicious no bake recipe for a cheesecake-like JELLO called “Gelatina Flotatina.” When I was little, she would do some magic with a can of evaporated milk that resulted in a light cheesecake-mousse-y thing that wasn’t too sweet and also refreshing.
It’s delicious, easy to make, cheap, AND doesn’t require turning on the oven in this summer heat. It’s made with a combination of flavored or unflavored gelatin, evaporated milk, sweetened condensed milk and/or cream cheese. I LOVE ALL THOSE THINGS.
