Cream cheese frosting. What’s not to love, right? Light and fluffy frosting with a sweet tangy cream cheese flavor. Sure, it’s a given for your favorite carrot cake or red velvet cake, but did you know that it’s a surprisingly refreshing frosting option for summer recipes, too? Next weekend is one of my favorite holidays: July 4th! There’s nothing better than spending the day outdoors, grilling with family and friends, watching fireworks and celebrating our freedom.
Everyone will be bringing something to the 4th of July picnic, but you can bring the grand finale. Each of these tasty sweet treats captures the flair of the 4th without the fuss. In just a little time, you can add patriotic color and fun flavor to classics like cupcakes, ice cream cones and cookies.
Some of my favorite memories growing up were going to ice cream shops and getting GIANT ice cream cones. My favorite indulgence was the waffle cone, filled with a scoop or two of the chocolate peanut butter ice cream. I made sure it was so full that I had to eat it with one of the long sundae spoons. I was a kid. Giant ice cream cones made me smile. Heck, they still do! All of the different flavors, the funny upside-down cones decorated like clowns, all the toppings… Mmm… I’m salivating just thinking about it. (more…)
