2016 Baking & Decorating Trends

We’re excited to share the 10 baking and decorating trends for 2016! DIY candy, herb-adorned cakes, copper colors and pixelated images are just a taste of what you’ll find. Learn more about this year’s trends from Beth Somers, Director of Creative Content Development and Tiffany Parotto, Senior Copy Writer. Both worked closely with a handful of other trend watchers at Wilton to create this comprehensive list of hot ideas.


1. Nature’s Beauty

Flowers, herbs and greens create a luxe, rustic and romantic farm-to-table presentation.

Farmer’s markets and seasonal produce have been trending for so long that they now seem like the norm, but it seems that every year there’s a new way of showcasing all of that natural, garden-fresh gorgeousness. In 2016, expect to see lush arrangements of fresh flowers adorning cakes. Sprigs of fresh herbs and bunches of lemon leaves add natural greenery in an unexpected way, along with a pleasant scent.  Sometimes they even serve as a potential flavor cue for what’s inside. Rosemary olive oil cake with lemon buttercream, anyone?


2. Airy Pavlovas 

This meringue-based dessert has a crisp outer shell and soft marshmallowy center.

Perhaps more popular than ever for its lighter fruit toppings and seemingly weightless meringue shell, the pavlova made its first appearance in the 1920s. Today farmer’s market fresh fruit and exotic produce take center stage. Piles of fresh fruit lay on a bed of airy whipped cream atop a meringue disk with a crisp edge and soft pillowy center. Yum!


3. Classic Copper

Stylish, yet down to earth and inviting, copper can dress up or down any occasion.

From shiny Moscow mule mugs to matching mixers, copper is experiencing an explosive comeback that’s taking over the kitchen and spilling over into edible decorations.  This sophisticated metallic amps up a pastel color palette and pairs well with soft colors like pale blue, rose gold, pink and dusty bronze. With just a bit of copper Pearl Dust or Color Mist, you can add just a touch of shimmer to any treat.


 4. Piqued Interest

This trend is all mixed up, and it’s caught our attention.

You know the expression, “less is more?” Forget that! In this funky, playful trend more is definitely more: more candy, more colors, more icing, more sprinkles. Pile it all on, the taller the better because there is no such thing as over the top. Why is this trending? Simple! Because cake is fun, and this candy store/cookie jar/cake mash up goes to 11 on the fun scale. Think of this trend as an update to the cake fully encrusted in rainbow sprinkles that was so popular a couple of years ago. You just can’t help but giggle when you see one.


5. Font & Center

Make a bigger statement with lettering and fun sayings unique to the celebration.

Ever seen those grocery store cake fails, you know the one where it literally reads “Put Happy Birthday Tommy in the Middle”? If not, Google “cake message mistakes” (you can thank me later). It’s real. So, say goodbye to the phoned in, played out birthday wishes and get creative with what you say and how you say it. Fun lettering and unique fonts help express your special message. Play with unique phrases, fun messaging and cute expressions.


6. The Statement Ring

This new statement piece takes the cake.

In 2015, it was all about the statement flower – one big single bloom, either gum paste or fresh, that acted as the focal point of a cake or treat, kind of like your favorite statement necklace.  In keeping with the jewelry theme, we give you the statement ring. Cake tops will be encircled with bold wreathes of icing flowers this year. Piped flowers are a classic cake decorating technique and are poised for a comeback, especially when the color palette is monochromatic with minimal pops of contrasting color. This gorgeous halo arrangement gives these classic bag-and-tip decorations a sophisticated update.


 7. Geeked Out

We’re embracing our inner nerd and putting our fandom on parade.

Let your geek flag fly. There’s nothing cooler than being authentic, and this trends all about embracing what you’re into whether its video games, computers, sci-fi or comic books. Nerd culture is bigger than ever. And by the way, it’s nothing to be ashamed of! Super fans, gamers, computer geeks and science nerds, it’s time show us what you’re made of. Pixelated cakes, galactic color palettes, comic book heroes and video game stars. They’re reason enough to celebrate.


8. Candy is Dandy

Combine interesting ingredients, flavors, color contrasts and unexpected toppings.

The Maker Movement is going strong. People are DIY-ing all kinds of things, including candy. Regardless of previous time spent in the candy kitchen, we’re seeing a huge uptick in the number of people interested in making their own homemade candies in order to customize flavor and color. From fudge to caramels and lollipops to truffles, candy makes a wonderful, personalized gift, perfect for holidays like Valentine’s Day and Christmas as well as birthdays and hostess gifts. We think that’s pretty sweet.


 9. Focused Freehand

Don’t take yourself so seriously because this trend calls for the perfectly imperfect.

Didn’t get the adult coloring book you had hoped for this Christmas? Give this trend a try. It’s the creative outlet adults are craving and our rendition is, dare we say, a little sweeter. Edible art? Bonus! So relax and enjoy a no-pressure project. Pipe freehanded designs or use an edible ink marker to draw on a fondant covered cake or cookies covered in royal icing. The best part, every project is a one-of-a-kind piece of art. No rules, just a fun free for all.


 10. Catering to Kidults

Just can’t adult today? Reminisce over a sweet treat catered to your childhood.

Growing up, there were two groups of breakfast eaters: those who were allowed to eat sugary cereals (thanks, Mom!) and those who had to tough their way through bowls of bran twigs. Regardless of what group you fell into as a child, the treats of your past are back in a big way. Indulging in the forbidden/beloved treats of yesteryear brings on a wealth of happy memories and ear-to-ear smiles. Enjoy your trip down memory lane though rice cereal treats, sprinkle-covered ice cream cones, and jewel-toned candies. Mom’s permission is no longer required, even if we’re all still kids at heart.

    I think these ideas are cool and I especially like the geeky cake because the little tiles in the bottom
    I actually tried this recipe by just looking at the picture not exactly perfect but it’s cool it came out something like it but nice
