Easter is just around the corner and what better way to get excited for it than baking! I will be visiting my family in Michigan for the holiday and was asked to bring dessert this year. After years of having the same old pies and cookies, I thought it was time to spice it up a bit with Wilton’s new Treat Pops, decorated for the occasion of course.
Wilton’s Mini Whoopie Pie Pan works great to make the perfect size cake bites for the treat pops. I also picked up some Spring Micro Sprinkles Mix and Bunny with Jellybean Royal Icing Decorations to use as my accents.
I wanted lots of spring colors in my treat pops so I began by mixing up some yellow cake mix and various icing colors to get pastel green, peach, and purple cake batters. While my mini whoopie pies were baking, I started on the icing. Again, to get an assortment of pastel colors I made pink, yellow, and blue icings and put each in a disposable decorating bag fitted with a No. 18 Open Star Decorating Tip.
Once my mini pies were cool, I began to assemble the treat pops. To make things easier, I placed each treat pop stick in the matching treat pop lid so they would stand on their own. Starting with a layer of cake, I alternated colors of icing and cake until it reached the top. After making a few in this way, I began adding in a layer of sprinkles on top of the icing layers to make them even more attractive. This took only a few minutes to do.
To finish it off, I put a last layer of sprinkles on top and placed a bunny icing decoration on each treat pop. I can’t wait to see what my family thinks when I show up with these! I just know my little cousins will go crazy over them.
