PEEPS Ears Treat Picks Make Coconut Cupcakes Perfect for Easter

Easter Cupcakes: Peter Cottontail Chocolate Coconut Cupcakes with PEEPS Easter Bunny Cupcake PicksWaiting on Martha founder Mandy Kellogg Rye and I have two things in common. First, we both hail from the same undergrad institution. (Though, I’m guessing I was living in the dorms the year she arrived in this world.) But, much more importantly, we both think the Easter bunny ears from the Wilton PEEPS Cupcake Combo are irresistible!

Take a look at the charming Peter Cottontail Coconut Cupcakes she made. Not only do I love the polka-dot baking cups she used, as they offer a cheery spring look, but also, the photos of these cupcakes make my mouth water!

Mandy also provided the recipe for her cupcakes. (No cake mix here!) I love that she coupled chocolate batter with a generous layer of vanilla icing. Then, she topped it with toasted coconut for an amazing flavor combination! The little cupcake pedestals make the cupcakes look even more special — I’m glad that Mandy provides a link to order them.

Pop over to Waiting on Martha and tell Mandy how much you love her coconut cupcakes, then tell us what you would make with those adorable PEEPS bunny ears!
