Statement Birthday Cake

Messaging becomes even bigger in 2016 with stylized lettering, bold font styles and fun sayings.  This cake shouts the message that the birthday boy or girl is now five years old.  The letters for the top of the cake are easy to make using Decorator Preferred white fondant tinted to a favorite color.  The sides of the cake feature decorations colorfully piped icing.

Makes 36 Servings.

 Ingredients:ClBiCa26466 1 crop

*Combine Violet with a Rose to make purple shown.


Step 1: One day in advance, prepare fondant for letters

Tint 2 oz. fondant teal; knead in 1/8 teaspoon gum-tex tylose.

Step 2: Also one day in advance, make fondant letters

Roll out fondant 1/8 in. thick. Cut ½ in. wide strips; cut strips the following lengths:

  • “f” – one 3 in.; two 5/16 in.
  • “i” – one 1-1/8 in.
  • “v” – one 2¼
  • “e” – one 4 ½ in.

Form letters.  Attaching shorter lengths for the “f” to the larger strip with a damp brush.  Let letters dry on sides on cornstarch dusted cake circle at least 8 hours.

Step 3: Make layered cakes

Bake and cool two 6 in. cake layers and two 8 in. cake layers.  Level all layers to 2½ in. high; fill, stack and lightly spatula ice cake for 6 in. x 5 in. high and 8 in. x 5 in. high cakes on same size cake circle.  Prepare cakes for stacked construction.

Step 4: Stack cakes

Cover cakes with white fondant.  Stack cakes.

Step 5: Tint icing

Tint ¼ cup icing each teal, pink, yellow, and purple. Reserve ½ cup white.

Step 6: Prepare to decorate cake.

Place tinted icing in decorating bags fitted with couplers.  Place white icing in decorating bag fitted with tip 3.

Step 7: Decorate clouds.

Using tip 1, pipe outline clouds in assorted sizes, shapes, and colors around top tier.

Step 8: Pipe raindrops.

Pipe tip 2 dots in assorted colors on sides of bottom tier, grouping same colors in an area; pull icing up with tapered spatula.

Step 9: Pipe bottom border.

Pipe tip 3 white bead border.

Step 10: Attach letters to top of cake.

Melt small amount of white Candy Melts candy in decorating bag. Attach fondant letters with dots of melted candy.
