– 2 cups peeled, mashed, ripe bananas (usually 4 or 5 whole bananas) – 2 cups all-purpose flour – 2 teaspoons baking powder – 1 teaspoon ground cinnamon – ½ cup (1 stick) butter, softened – 2/3 cups firmly packed dark brown sugar – 2 eggs – 1 teaspoon vanilla extract

Ready? Let's Get Started

Ingredients

Preheat oven to 325°F.  Spray loaf pan with non-stick spray.

In a small bowl, combine all the dry ingredients; flour, baking powder, ground cinnamon, salt & dark brown sugar.  Then set it aside.

Let's mash some bananas!  Make sure they're ripe, throw them in a bowl, and mash away with your mixer until you've got 2-cups worth.

In a large mixing bowl, beat the butter and sugar on medium speed until light and fluffy.  This should take about 2 to 3 minutes.

At this point, add the eggs, the mashed bananas and the vanilla extract to the sugar and butter .  Continue mixing until everything is well combined.

Mix the wet & dry ingredients together. For that perfectly moist and tender crumb, add the flour mixture to the butter mixture and mix until just incorporated.  Your batter won’t be perfectly smooth, but that’s okay.

When the batter is ready and you no longer see big pockets of flour, pour the mixture, into your prepared loaf pan.

Bake for 60 to 65 minutes, until a toothpick inserted in the center comes out clean. You can also lightly press the bread to test for doneness.  The bread will be done when it springs back when lightly pressed.

When your bread is done, remove it from the oven and let it cool on a cooling grid for 15 minutes.

After cooling in the pan for 15 minutes, remove the loaf from the pan.  Then let it cool completely to room temperature on the grid before cutting.

All done!  Ready to share and enjoy!
