How do you make a graham cracker crust that doesn’t fall apart?

Wondering how you get graham cracker crust to stay together? You’re not alone! Since it’s essentially made of crumbs, this crust does have a tendency to crumble. The secret is two-fold.

First, make sure you add enough butter. As the only “wet” ingredient, butter is essential for holding everything together. If your graham cracker crust mixture still looks a little dry, add a few more tablespoons until the crumbs stick together.

Secondly, you want to make sure the crust is really packed into the pie pan. This will also prevent the filling from leaking through the crust.

We like to use the bottom of a flat measuring cup to help back down and smooth out the surface. You can also use the bottom of a drinking glass. Don’t forget to pack the edges as well!

Should you bake a graham cracker crust before filling?

Unless otherwise stated in your recipe, we do suggest pre-baking (or blind-baking) your pie crust before filling. Baking allows the butter and sugar to bind, helping your crust stick together. It will also add a beautiful color and a richer flavor to your homemade graham cracker crust.

Sometimes ice box pies suggest chilling the crust instead. The cold helps the butter become hard again, helping to hold the crust together. Since this crust doesn’t contain any raw ingredients, either way is fine!
