This three-layer ‘brookie’ combines three desserts in one: chocolate chip cookies, cheesecake and brownies! Great for anyone with a sweet tooth, this delicious dessert recipe is the perfect way to indulge your cravings!
What’s better than chocolate chip cookies, cheesecake and brownies? A dessert that puts them all together, of course! While each of these desserts are great on their own, having them all at the same time is a delicious experience you don’t want to miss.
What is a Brookie?
A brookie is typically a cookie and brownie put together. It can either take more of a round cookie shape or a bar brownie shape. However, we took it one step further!
We start with a classic chocolate chip cookie on the bottom, then add a cookies and crème cheesecake center, then top it off with a rich, chocolatey brownie on top. This recipe may be a little extra work, but it’s well worth it!
Recipe Tips Before You Get Started
- There are a lot of ingredients here, so we suggest using the mis en place technique of grouping each measured ingredient by layer. That way there’s no confusion when it comes time to mix.
- The first thing you should do before starting on this recipe is bring the cream cheese out of the refrigerator. This will give it plenty of time to soften to room temperature.
- This dessert is made and assembled from the bottom up. After we construct each layer, we’ll pop the pan into the fridge to keep everything around the same temperature to ensure even baking. This is crucial for a thick, layered dessert like this!
- While it may be tempting to replace the baking chocolate with chocolate chips in the brownie layer, we don’t suggest doing this. Chocolate chips have stabilizers and other ingredients that actually help chips keep their shape, so it’s easy to burn them. The baking chocolate melts beautifully and adds great chocolate flavor, too!
Brookie Recipe
Ingredients
Cookie Layer
- ½ cup Butter 1 Stick, Softened
- ½ cup Light Brown Sugar Firmly Packed
- ½ cup Granulated Sugar
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 cup All-Purpose Flour
- ½ teaspoon Salt
- ¼ teaspoon Baking Soda
- ½ cup Semi-Sweet Chocolate Chips
Cheesecake Layer
- 16 ounces Cream Cheese Room Temperature
- 1 Egg
- ½ cup Granulated Sugar
- 12 Crème-Filled Chocolate Sandwich Cookies Coarsely Crushed
Brownie Layer
- ½ cup Butter 1 Stick
- 3 ounces Unstweetened Baking Chocolate Coarsely Chopped
- 1 cup Granulated Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- ¾ cup All-Purpose Flour
- ½ teaspoon Salt
- 1 cup Semi-Sweet Chocolate Chips Divided
Topping
- Caramel Ice Cream Topping for Drizzling (Optional)
Instructions
- Preheat your oven to 350°F. Prepare a 13 x 9 in. pan with vegetable spray.
Cookie Layer
- Ina large bowl, beat the butter, brown sugar and granulated sugar on medium speed until light and fluffy. This should take a couple of minutes.
- Add the egg and vanilla extract and beat until combined.
- Add the flour, baking soda and salt. Mix just until combined. Fold in the chocolate chips.
- Spread the cookie dough into the bottom of the prepared pan.Use your fingers to help spread the dough out into an even layer. If the doughis sticking to your fingers, dust your hands with some flour.
- Place the pan in the refrigerator to chill.
Cheesecake Layer
- Ina large mixing bowl, beat the cream cheese, egg and sugar on medium speed until smooth. You don’t want any lumps, but you don’t want to overmix it, either.
- Fold in the crushed sandwich cookies.
- Spread the cheesecake batter over the cookie dough layer.Place the pan back in the refrigerator to chill.
Brownie Layer
- In a large microwave-safe bowl, microwave the butter andchopped baking chocolate at half (50%) power for 60 seconds. Stir thoroughly todistribute the heat. Continue to microwave and stir at 30-second intervalsuntil the chocolate is smooth and completely melted.
- Stir in the sugar, eggs and vanilla. Mix until combined. Add the flour and salt and stir just until combined. Stir in ½ cup of the chocolate chips.
- Spread the brownie layer over the cheesecake layer. Sprinkle remaining ½ cup of chocolate chips on top of the brownie layer for added flavor and fun!
- Bake the brookie for 55 to 58 minutes, or until a toothpick inserted in the center comes out almost clean. Because this dessert is so thick, it will hold a lot of heat after it comes out of the oven, so the layers will continue to cook slightly as it cools.
- Cool the brookie completely in the pan on a cooling grid. While it’s tempting to slice into this treat right away, resist the temptation! It will be much easier to slice cleanly when everything is cooled.
