A dome typically forms on the top of a baked cake, making its surface uneven. You can create a perfectly even surface by leveling your cake. This technique makes it much easier to ice and stack layers.  Torting, or dividing a cake into layers, creates height once filling is added. Torting also ensures that the cake will stack evenly. Torting a cake can be done on a flat surface, but using a turntable makes it easier to slice uniform layers.  Once your cake is torted, it’s time to ice your cake!  Icing a cake may look simple, but there is definitely a technique behind it.
